Most Beans Are Not Green

Not here anyway.  <grin>

Dragon Tongue beans.  They are a flat wax type that does not develop strings until really late in their maturity, taste fantastic, and are a pretty good dry bean as well.  My best three plants I am not picking from to save seed for next year.  This handful is going to be added to Penne Pesto.

They are really a striking bean.  The purple streaks disappear with cooking.

Easy way to tell them if they are cooked through yet.  These are not yet in this photo.  I sauteed them with bacon to add to the pesto.IMG_3507

At the very end I added fresh chopped basil to the beans.  At this point they are cooked and look like a flat yellow bean.

No photos of the finished dish.  And it is finished.  Having 4 kids means 2 pounds of dry pasta, a full cup of pesto (which Frank and I made last year) half a pound of bacon (and grease) and the beans all tossed together, and all gone 20 minutes later.
