Just one of the things we do, and it starts in earnest when the warm weather hits. The picture above is Chocolate mint, which is the strongest of the mints we grow.
This is apple mint, and the first year we have had enough to harvest for drying. Curious to see how well it works with winter teas.
Not the first time I have harvested Monarda. Will not be the last. This is one of the great mainstays of our tea garden and wonderful to have on hand. Pretty soon I will let them bloom, and I will harvest the blooms and dry those down too.
Every year we put aside a few quart jars packed full of tea herbs, and we are just getting started.
