Cooked Down

The three gallons of cooked down sap were waiting for me last night when I got home from work.  I opened the sliding door to the deck, fired up the stove,  got that boiling again, and checked to see how the tree had done over the day.  I had another 5 gallons of sap!  By the time I went to bed last night that had all been reduced to about 2 gallons, and I finished it off this morning, resulting in two full pint jars and a half pint.  Not too bad.   Raining here lightly now.  Next 10 days are going to be mostly rain.  Perhaps that will finish thawing things out and rid the lake of ice.  As of yesterday it was still frozen tight to the shore.  We will see.
