More Syrup, And Other Things

One of the damn cats got me up at 5 am, which actually is not too bad.  It was time to get up anyway and there is never any lack of things to do.  As for the cat, apparently there was not enough water in the water dish.  He prefers it to be filled to the point that it is slopping over the sides.  You oblige his idiosyncratic behavior because if you dont, he will not leave you alone.

I was up last night cooking down maple sap until 11 pm.  The 8 gallons the tree gave up yesterday were reduced down to 3, and now at 630 am as I write this, I am getting down to about 1 gallon.  Once it gets down to about a quart I am thinking it should be done.

Spring better hurry up and get here.  At least that is what the robins that have been singing in the dark for the last hour are saying.  I agree.  I need it warm enough that I can get outside and clear gardens, and move plants out of my basement, and off my counters, tables and windowsills to another location.  6 of the next 10 days are supposed to have rain.  Hopefully rain.  I need the snow gone but the way the weather has been going I suppose any of this could end up being a few more inches of snow instead of a rainstorm.

Nearly 7 am now.  Time for me to get the kids up and ready for school.  Maybe the sap will be cooked down enough to bottle before I head to work, and maybe I will simply be adding more sap to it to cook down tonight when I get home from work.  We will see.

Well, so I am home now, the family is full of venison grand marsala with potatoes and butternut squash on home made bread, the kids are getting ready for bed, and the sap buckets had another 4 gallons in them, but I did finish cooking down what I had before today.  Kids are eating near as fast as I make the syrup, but we do have a half gallon now. Too tired to cook the new sap down tonight.  Maybe tomorrow.
