My tree started producing sap again after a few days of just a few quarts a day. Last night I took 4 gallons from the pails. I did not have time to cook it down, but when making dinner (stir fried venison with ginger, garlic, onions and carrots) I thought I would try cooking rice in the sap.
It was fantastic. Not at all like adding maple syrup, honey or sugar to it. I think I should can up a bunch of quarts of this stuff to use later in the year for cooking with.
